A century ago, the average daily diet provided around 500mg of magnesium. Today, most people get somewhere between 175 and 225mg. That’s less than half of what our great-grandparents were getting from the same kinds of foods.
So, what happened to the dirt?
Modern industrial farming relies on synthetic fertilisers (usually a mix of nitrogen, phosphorus, and potassium) to grow crops quickly. These make plants look bright and healthy, but they don't replenish the full spectrum of minerals the ground needs. Potassium is a particular problem because it’s a bit of a bully. It competes for the same entryway into a plant’s roots as magnesium. When the soil is flooded with potassium, the magnesium gets pushed to side.
We also have to look at how we treat the land. Healthy soil is supposed to be a living ecosystem full of bacteria and earthworms that break minerals down so plants can actually absorb them. Modern pesticides and herbicides like glyphosate have progressively stripped that life away. Glyphosate actually binds to the magnesium left in the dirt, locking it up so the plant can't absorb it. It’s a double blow: the magnesium is being depleted, and what’s left is being chemically blocked.
What about organic produce?
It’s a fair question. If the problem is synthetic farming, does buying organic solve it?
Partially, but not entirely.
Organic farming avoids synthetic fertilisers and most pesticides, which helps preserve soil health over time. But soil depletion is a slow process that took generations to develop, and it'll take generations to reverse.
Even organic crops grown in depleted soil can't synthesise magnesium that isn't there. A plant can only work with what the ground provides. This isn’t an argument against organic food (there are plenty of great reasons to choose it), but it’s an honest acknowledgement that even the most carefully sourced diet is working with a compromised starting point.
